As part of the International Business Development Office I focus on the restaurant operations of Eataly stores in Europe, Asia and Middle East. My field of action includes both FOH and BOH operations. in particular my main tasks include: - Definition of the restaurant activities for the new JV stores and support of the franchisees in their selection - Development of the market analysis, benchmarking, sales forecasts, employees structure and related cost estimates. - Definition of the Restaurant service structure and personnel needs - Screening and selection of the local Executive Chef and Restaurant GM. - Definition of the KPIs for the local General Restaurant Manager and Floor Managers - Support and training of the local management in the pre-opening phase - Definition of the menu set up with the Local Executive Chef and the Project Manager
